Hotel kitchens are often large, have many appliances and run long hours, with hot cooking, steaming, dishwashing and prep areas operating at once — so summer heat is more severe than in a small restaurant. Many projects still leave the chef stations hot even with a high-power air conditioner, usually not because the AC is too small, but because the exhaust keeps pulling away air and cooling, leaving the kitchen's air balance unsolved.

The first step in cooling a hotel kitchen is to review the exhaust system. The hood volume must capture the fume, but too much exhaust creates strong negative pressure. Without dedicated make-up air, conditioned air from the dining room and corridors is drawn into the kitchen through door gaps, wasting energy and hurting public-area comfort. New projects should therefore design kitchen make-up air together with the exhaust.

A water-cooled fresh air unit suits large-volume make-up air and spot cooling. Sending treated fresh air through ducts to the chefs' stations improves comfort without breaking hood capture. For cold-food rooms, prep areas or enclosed stations that need more stable temperature, a commercial kitchen air conditioner can be used. The two have different goals: the former emphasizes large fresh-air volume and comfort, the latter stronger temperature control.

Air-distribution layout decides the final result. Outlets should not simply sit in the center of the ceiling, but be planned around the cooklines, hoods and staff movement. An over-strong cross-draft blows the fume apart, while outlets too far from staff fail to provide effective spot cooling. Large kitchens should also be controlled by zone, so one system does not serve spaces with completely different heat loads.
