There is no single maintenance interval for every kitchen exhaust cabinet, because grease buildup depends on the cuisine, operating hours, appliance type, hood filter performance and fan position. Barbecue, frying and Sichuan/Hunan kitchens generally accumulate grease faster than steaming kitchens. Rather than mechanically doing it every half year, the better approach is a periodic inspection routine that schedules cleaning by the actual grease on the impeller and duct.
Impeller grease affects airflow, noise and safety at the same time. The centrifugal impeller spins fast, and an uneven oil layer breaks its original balance, causing vibration. The vibration travels to the frame and duct and produces low-frequency resonance or abnormal noise. Grease also changes the effective blade passage and lowers airflow efficiency, finally showing up as weaker hood suction.
Cabinet cleaning should not be just a quick rinse of the housing. During service, check the impeller, volute, inlet, drain position and duct connections, and remove grease by a method suited to the equipment structure. Protect the motor, bearings and electrical parts from water. After cleaning, confirm the impeller is not deformed and the fasteners are tight, and run the unit to check that vibration and sound return to normal.
Beyond the fan itself, the hood filters, purifier and duct are part of the same system. If the purifier is blocked or the duct heavily greased, cleaning the fan alone will not restore the original airflow. Catering operators can use system static pressure or end-of-duct airflow as reference data before and after maintenance, making performance decline easier to spot through long-term records.
